The Velcro was by far one of the best modifications that I made to my uniform after my first troop. Ever since then my belt always stays in its proper spot. I would recommend it to everyone.

3. Modesty panel. I don't see why you wouldn't be able to sew it by hand. I would use the extra material from your pants if you hand then hemmed. All you need is enough to cover any gaps showing around the neck

I'll try to answer some of your questions.
1. Your East German boots. Take them to a cobbler and get a quote on having them taken in first. I've seen a few videos online and I know it's possible, but I'm unsure of the cost.
2. Yes the boots in the link that you provided will also work just fine... as per the CRL.
For 501st approval: -
Knee-high, black, lace-less, smooth non-textured, leather or leather-like material.
- Rubber is not acceptable.
- PVC or synthetic material is allowed as long as it gives the appearance of leather.
- There are no stretch panels, buckles, snap tabs, or decoration.
- Boots have conservative heels.

If zippers are present, they are hidden on the inner part of the boot shaft.
- Not visible from the front, side or back.
- The top of the boots may be flat or Spanish Style, but not Cowboy or Super Hero (pointed at the front) style.
For level two certification (if applicable): - Boots do not have a zipper.
For level three certification (if applicable):

Boots are made of leather.
- Not vinyl or PVC.
- Exact replicas of English riding (dress) boots or Equestrian boots.

The boot tops, however, need to be cut flat. That notch detail at the top is a no-go. Otherwise, your own boots which already fit you should be fine. They're even ok as-is (other than cutting the top flat, which is an easy fix for any cobbler), but will look better if they can be stiffened around the ankles.
2. As well as Kalani's suggestion about the top notch.
Keep us in the loop with how the boots turned out and if you can post a photo after the cobbler has fixed your boots. It's always great to see the finished product and I find it helps new members as well. Best of luck and looking sharp!!

A full 2 inches... I would call a cobbler in your area to see if they are able to stretch boots out that much. You'll probably need them to be stretcher at least 2.5 or so as your pants/flight suit will add to the overall width of your calves.
Have you looking into getting "Knobelbecher" German Jack boots? I bought mine from a member who lives in Germany, Fiona ("Merlyn" in the forum) was awesome to deal with and spent the time to find me a pair that fits!! https://www.facebook.com/misstuskendesigns/

Dear Declan,
I thought I would share some news with you. I am not sure if you know this, but when I was about your age all I wanted to be was a Tie Pilot. I ended up joining the Imperial Navy and became a Commander, which I absolutely loved. I was recently accepted into the Imperial Flight Academy to become a Tie pilot – it has been one of the most challenging things I have done but I have enjoyed every minute of it and have made some wonderful friends that have encouraged me through some really difficult times. I am pleased to say that I have received my flight wings and now I am a Tie Pilot Officer.
I have included a photo of me aboard my Star Destroyer Intrepid II, and you can see my friend Charles (I call him Chuck!) in the background, wearing his Tie Pilot gear. Did you notice the new Tie Fighters behind me?
I wanted to tell you that I have been thinking a lot of you lately – the bravery and courage you have shown has encouraged me to continue, even when things got really tough here in the Academy. Keep your chin up and keep aiming for the stars.
