I read some illustrated reference guide (A LONG time ago) and I remember reading the same thing, the style is the same just the color was different. Maybe the same book you're talking about?

That third picture almost looks like a scout trooper blaster. I know it's likely not, but.
One of the things that suffers in digital renders is small three-dimensional surface detail, especially things like protruding half cylinders, antennas, greeblies etc. Companies that do this type of work find it a better use of their time just either printing the texture onto the flat "skin" of the model in the hopes it will look right or taking creative liberties and omitting them entirely.
Things like jodhpurs would have animated so that excess fabric would need to be animated to behave like fabric would when someone is moving/standing still/etc. Needless to say, it was likely omitted due to simplicity of design and the difficulty of rendering correctly. All the small details, extra textures and animations consume processing power and it's unlikely someone will see small details missing and throw the game out entirely, but they will likely stop playing if their rig can't handle the graphics.
You'll notice that scout troopers in the original battlefront have no knee plates at all! Probably impossible to configure the moving joint under the solid "armored" knee plate.
Your best bet, in all honesty, is to just do the AT-AT commander. Most of the younger fans (especially those who have played the games) will likely call you an imperial officer from battlefront anyways.

One potential problem with this costume is the low graphics makes it difficult to interpret what the game designers had in mind for this officer.

If she's striving to emulate a specific on-screen configuration for Level 3, definitely simply copy their configuration, as others have said.
If she's going for a more generic approach, it's almost always a safe bet to start off with two: One in each pocket. Then add a third later should she be emulating one of those rare officers with more than two, or simply leave one at home for the officers with one.
