First of, welcome to the forum! I used to live in the NTX area, so am familiar with the folks down there. Excited to have you here with us.
 
Lots to unpack here, let's do this one by one.
 
Color - feldgrau? Grey? Olive? 
 
What you are seeing is the effect of the "feldgrau" or "field grey" color. Lots of posts on the forum about this subject on the forum, but basically it comes down to is that the fabric can have a range of shades, color-grading, and will appear differently under different lighting (it's a craziest fabric). @kman laid it out nicely in this post here, so I won't repeat it. This is the same color that we see on Veer, both in and out of armor. Most of the officers you see in the Original Trilogy films that look like they might be wearing grey/olive fall under this category. We shouldn't need to be creating new CRLs as the officers you have pointed out have been addressed here in several CRLs, depending on who you wanted to apply with:

So, where do we go from here?
 
Honestly, without seeing the costume in person, I'd say what you have might fall within the range of olive grey acceptable for basic clearance. That's going to be up to your GML to decide whether to clear it or not following the CRL descriptions in the links above. There are a few other things you'd need to update if your goal is to go for 501st clearance, such as the already-pointed out hat stitching, removing the DH-17 from submission (it's not an accessory listed in the CRLs), etc. Again, your GML is the person who makes the approval decision, but hopefully the information here is helpful in your discussion w/ the GMLs. If your GML continues to have questions, they can always reach out to the 501st costuming advice forum (which I know they have leveraged in the past).

I left that purposefully vague. 
Thinking logically, I know the only gray uniforms are ISB attendants, and these are not ISB attendants. It's clear to me that "gray" from the screen caps likely is trying to capture feldgrau.
 
That being said...I've gotten bleach on black clothing before and it has a very dramatic effect:

 
 
 
 
There's shades of tan and red in there that look great on the undead.

That game was made before any blue capped cylinders on screen ever had a silver clip.  I'd say allow both.  Game polygon for code cylinders is all sorts of whack anyways.

I’ve been wondering about using some of the “discount” Officer uniforms for this, since I doubt anyone would want to use their $300 Denuo Novo tunic and just trash it.  As you said, this should be fun.

Might as well add Bridge/Scanning Crew as an option, a flight suit is easier on the wallet when it comes time to "zombie it out". Not to mention, I have a spare or two that I wouldn't mind using for this.

It is in all of the non saga CRLs.
We put it in there to raise awareness and enshrine it.
 
But if someone has a problem with you carrying a coffee cup, good lord that person needs to get a grip.

I erroneously stated this was "just" a level 3 thing. In reality, it was a L2 thing. Apologies for this- it was not a bait and switch, but an error in interpretation on my part.
Plans to make this a L2 thing were discussed previously and extensively in the past.

The big reason is the shade of "olive" is way wrong. We will still black and white tunics since those colors are good.

Again, this is just a L3 restriction. They are still good for basic approval. This lets us have high standards, but not make us gate keepers. 
 
Like the FISD, we would put this in a Special Notes section at the top of the page and also mention it in the tunic/jodhpurs L3 sections of the CRLs.
